Zucchini Sushi

A fun dish RecFti member Piyuthai makes with her little ones that is as pretty as it is tasty! Feel free to tweak the ingredients as you see fit – all are optional. 🙂

thinly sliced zucchini
smoked salmon
carrots (cut into matchsticks)
argula (can also use spinach or fresh herbs)
avocado, sliced
mayonnaise (make your own like Piyuthai, or opt for organic and/or vegan versions)
toothpicks to hold the sushi together
