Vegan French Toast

The brain child of my brilliant vegan friend Keri, this dish is so irresistible even devout carnivores can’t get enough!

1-2 ripe bananas
can of coconut milk (we used light cause that’s what was on hand)
flaxseed meal
slices of whole grain bread (we used sprouted wheat)
cinnamon
nutmeg
coconut oil for the pan
earth balance vegan butter (optional)
fresh fruit to top

Pour some coconut milk onto a deep plate with sides (or a baking dish). Using a fork, mush into the milk some ripe banana, until it is mixed a paste-like. Add cinnamon, nutmeg and a tablespoon of flaxseed meal, mix well:

Place bread into the mixture and use the fork to coat both sides:

Meanwhile, heat a pan to medium-high heat. Drop a scant teaspoon of coconut oil into the pan, and the same amount of earth balance if you like a little buttery taste. (If not, just double your coconut oil.) Cook until browned, then flip:

Top with fruit slices and enjoy! No syrup necessary. 🙂
