Split Pea and Barley Soup
This comforting classic has a nice twist with barley to add another texture. This soup is a meal in itself and would go great with just some good bread and a small salad.
One 16-oz. package green or yellow split peas
1/2 cup pearl barley
1 large onion, finely chopped
3 medium carrots, thinly sliced
2 tsp. salt-free herb-and-spice seasoning mix (or make your own with your favorites)
Salt and freshly ground pepper to taste
1. Combine the first 5 ingredients in a large soup pot with 8 cups water. Bring to a simmer. Cover and simmer gently for an hour.
2. Stir in 2 cups water, and simmer until the peas are completely mushy, about 30 minutes. Season with salt and pepper and serve, or cover and let stand off the heat for an hour or so before serving. Thin with water and correct seasonings as needed.
