Smoked Salmon Crostini

I love this dish for entertaining because you can prepare the salmon mixture earlier in the day and refrigerate it until ready to assemble. And the fresh herbs and lemon make it positively delicious!

½ c. chopped fennel bulb (also called anise)
¼ c. chopped green onions
1 Tbl. extra virgin olive oil
2 tsp. chopped fresh dill
1 tsp. grated lemon rind
1 ½ Tbl. Fresh lemon juice
1 tsp. ground black pepper
¾ lb. cold-smoked salmon, cut into thin strips
48 (½ in. thick) slices of French bread baguette, toasted (try Trader Joe’s organic whole wheat baguette – yum!)
½ c. light garlic-and-herbs spreadable cheese (such as Alouette Light)
Dill sprigs (optional garnish)

Combine first 8 ingredients; cover and chill at least one hour. Spread each toast slice with ½ tsp. cheese; top with 1 Tbl. Salmon mixture. Garnish with fresh dill springs, if desired. Yield: 24 servings.
