Simple Spaghetti Squash
Simple, delicious and SO good for you!
2 lb. spaghetti squash
garlic powder to taste
2 cloves fresh garlic, minced
cayenne pepper to taste
black pepper to taste
2 tomatoes, diced
1/2 onion, chopped
fresh basil leaves, thinly sliced
Preheat oven to 350 degrees. Slice squash in half length wise. Scoop out seeds with a spoon. Make slits on squash with knife and rub oil on squash. Sprinkle with garlic powder.
Bake for 30 minutes, let cool, and remove the pulp with a fork.
While squash is cooling, cook and stir garlic then onion until you can smell the fragrant. Add tomatoes, cayenne pepper, black pepper and cook until tomatoes are warm.
Gently mix the cooked onion/tomato mixture with squash, olives, feta cheese. Top with cooked/warmed up marinara sauce and basil.
