Mango Salmon with Quinoa

This simple dish is Joy’s go-to when she needs a hearty salsa fix. She used leftover salmon, quinoa and mango salsa for a simple and filling treat!

Ingredients:

  • 3 oz cooked salmon, shredded (can be canned)
  • 1/2 cup of cooked quinoa
  • your favorite mango salsa (Joy’s favorite comes from the neighborhood farmer’s market)

Mix, and enjoy cold or room temp! Eat on it’s own or on a bed of mixed greens for a refreshing salad. 🙂
